SoI would suggest just to try out wild combinations, the mclaren 650 and the 2018 bentley are good starting points. The 650 is nimble, precise, very fast and still quite stable. The Bentley is also very nimble but requires more care with the gas, it loves to oversteer on corner exit.

At Silverstone whit Aston Martin, i made my best 2.00.5, other pilots with the Bentley GT3 2018 went 2 seconds faster on the lap (1.58 low), and in the race, seeing the Bentleys coming from behind, the difference between cornering speed was impressive.
